Pecan Recipes

These and many other pecan recipes are from the Plano Aggie Mom’s Cookbook.  The cookbook is available through Boutique.

Orange Pecans 

1   lb pecan halves
1   cup sugar
Dash of salt
2   egg whites, beaten until stiff
½  cup butter
1   tsp grated orange peel

Melt butter in cookie sheet.  Spread nuts on top.  Bake 30-40 min at 325 degrees.  Stir once.  Add sugar and salt to beaten egg whites.  Fold in baked nuts.

Spiced Pecans 

10   oz pecan halves
2     Tbsp butter
1½  tsp ground cumin
¼    tsp cayenne pepper
2     Tbsp sugar
1     tsp salt 

Melt butter in small heavy saucepan.  Add cumin and cayenne stirring until well blended (about 15 sec).  Pour over pecans.  Add sugar and salt and stir to coat.  Transfer to baking pan. Bake at 300 degrees for about 20 min until toasted.  Store in airtight container. 

Oven Salted Nuts

1   lb pecan halves
6   Tbsp melted butter
Salt

Spread pecans on sheet pan (with sides).  Bake in 200 degree oven for 1 hour.  Drizzle with butter.  Stir well.  Sprinkle with salt.  Return to oven and continue to bake for another 2 hours.  Stir every 30 min or so.  Spread on doubled paper towels to drain and cool.  Store in tight tins.
